We are delighted that you have this opportunity to become familiar with this wonderful food which our ancestors first started preparing nearly one hundred years ago. Even Jókai Mór, in his novel entitled Aranyember, made reference to the ”fine tasting, honey-sweetened wheat germ pudding.”
Long ago it was only during the Christmas and Lenten seasons that people prepared and ate this special food, but nowadays however wheat germ pudding is bought regularly from the beginning of October until the end of April. Here in Hungary it is only in Csongrád and the surrounding areas that this food is known and prepared, however this area has been expanding year by year.
According to analysis by the Hungarian Ministry of Agriculture, wheat germ pudding contains 20-22% sugar (this sugar isn’t the sugar that you might be thinking of, but rather the starch in the wheat that turns into maltrose and dextrose during the baking process), iron, vitamin B-1, B-6 and the rarely found B-12. It may also occur that traces of Vitamin A and K are found. And so, wheat germ pudding plays a valuable role in our nutrition because it can be easily digested, and in this way cleanses our system. Even if our body doesn’t need to rid itself daily of toxins(wheat germ pudding contains no additives, emulsifiers, colourings, flavourings or preservatives whatsoever), our immune system will be strengthened by our eating this food and we will be healthier.
You may be interested to know that Hungarian doctors have developed a potentially effective medicine against cancer known as Avemart. This drug is made from wheat germ extract, and in animal research it has been proven that this product prevents the occurrence of metasthesis in cancer cells.
I sincerely hope that the time will come when you will be able to buy wheat germ pudding anytime, anyplace and that you will think of Csongrád fondly, where the recipe has been kept alive for many decades.
